上禮拜收到一個電郵,標題是:早晨吃雞蛋對身體是好還是壞?萬萬沒想到!不看會後悔……
點擊電郵裡附上的連結,看到文章列舉「早上一定要吃雞蛋的10個理由」。
這10個理由都是有標題加上解釋,相當長。所以,我在這裡只請大家看標題。它們是:(1)補充營養,(2)降血脂,(3)預防心臟病,(4)清熱補血,(5)保護視力,(6)保護肝臟,(7)防治動脈硬化,(8)預防癌症,(9)延緩衰老,(10)預防老年痴獃。
我想先請問讀者,當你看到(2)降血脂,(3)預防心臟病,(7)防治動脈硬化,你是不是真的像電郵標題所講,「萬萬沒想到!不看會後悔」?
那,你是不是很好奇,雞蛋是怎麼能有這些神奇的功效?
我們就來看理由(3)預防心臟病。
它的解釋是這樣:「中國農業大學食品學院副教授范志紅說,蛋黃中的脂肪以單不飽和脂肪酸為主,其中一半以上正是橄欖油當中的主要成分———油酸,對預防心臟病有益。」
蛋黃像橄欖油?
事實上,蛋黃的脂肪成分是非常近似豬油,而非橄欖油。
蛋黃:36%是飽和脂肪酸,44%是單不飽和脂肪酸,16%是多不飽和脂肪酸。
豬油:39%是飽和脂肪酸,45%是單不飽和脂肪酸,11%是多不飽和脂肪酸。
橄欖油:14%是飽和脂肪酸,73%是單不飽和脂肪酸,11%是多不飽和脂肪酸。
我可以理解,有人要為雞蛋除惡名的用心。但也無需如此極端,編出這麼一個荒謬的理由吧。
說真的,「吃雞蛋對身體是好還是壞」這個爭議,現在已經不是科學能解決的了。
當一篇說雞蛋好的報告出來,馬上會被反吃雞蛋的團體說,研究是由雞蛋工業資助的,不可信。
當一篇說雞蛋壞的報告出來,馬上會被鼓勵吃雞蛋的團體說,研究是由反雞蛋團體資助的,不可信。
所以,雞蛋是好是壞,你不用再問什麽專家。
你自己就是最好的專家。
我所能給的建議,只有兩點:
- 適量。
- 要吃,就連蛋黃一起吃,因為所有對健康有益的元素,都在那。如果你怕營養過剩,那就少吃。但絕對不要丟棄蛋黃。

Well, it depends on what kind of eggs you eat. It’s best to eat grass-fed chicken eggs (not those raised in cages, even though they claim to be cage free). Usually the yolk looks more golden orange while the ones you get from supermarkets are pale yellow. The grass fed farm eggs are rich in three are rich in three vitamin A, D, and K (especially K2). Vitiamin K2 has the ability to release the calcium from soft tissues (such as blood vessels) reducing the atherosclerosis. It also helps bringing the calcium to bone and teeth (thus increasing the bone health).
Also egg white is rich avidin which can bind to biotin. Cooking can destroy part of the avidin (but probably not all of them).

It’s easy. Just use Google scholar search for menaquinone plus CVD or osteoporosis. Basically, menaquinone is a cofactor for an enzyme called vitamin K-dependent carboxylase. This enzyme, once and only once, activated by menaquinone, alters the structure of osteocalcin and MGP to allow those proteins to bind calcium, a process called gamma-carboxylation.

I see. I don’t have one but just a well-educated conclusion. In general, all the faf solvable vitamins (A, D, and K) work synergistically together. The grass-fed eggs are rich in these. When animal such as cows or chickens are grass-fed, they get rich chlorophyll-containing plants, thus phylloquinone (K1) which is then converted to menaquinone (K2)/ On top of that, being able to be under the sun, their skip can also generate vitamin D. The reason I came to that conclusion was because the grass-fed eggs are rich in these, especially K2. Thus this matches your title “雞蛋能預防心臟病?"

It’s a widespread problem that people make claims about certain food’s health benefits simply based on their nutritional profile. It is important to know that until they are tested in clinical trials, the so-called health benefits are just speculations.

I agree that we shouldn’t make claims based on the food’s nutritional profile. But in this case, it will be hard pressed to see any clinical trials designed for this purpose. For now, I will simply follow the way that has been working for hundreds, if not thousands, years—raise the animal in a more natural environment and get full benefits from that. Grass-fed eggs/milks are in my list. Thanks for your attention.

They are not complete — if you take a close look at some items (such as Vitamin D and Vitamin K), you will see they are “0″ for the “wild" hen’s egg while the corresponding parts in the average hen’s egg were not. At first, I was puzzled. But then I found the number of samples (樣本數) were 0 for wild hen’s egg!

我知道有些人會說土雞蛋理論上,會有豐富的維生素D跟維生素K,但是會有多少?
對飲食有特殊訴求的人士,往往都將推論宣揚成真理,忽略了實證過程中可能衍生悖論。
假設土雞蛋的營養價值,實證後真的有很明顯的優勢(相較於籠飼雞蛋),
曬太陽就能補充D,維生素K有植物源K1的來源、發酵食品K2的來源,
似乎就營養價值,仍然是沒有特別花費太多預算去買土雞蛋的理由。
(但如果是商品上講明買這款蛋是友愛動物,當然是可以支持。)
